In a medium sized bowl add the lukewarm water, honey or sugar, and yeast. Stir to combine and let sit for 5-10 mins until the yeast Blooms. When it is ready it will look foamy on top.
Add the remaining flour, salt, and oil to the bowl and mix on the first setting of your stand mixer until just combined and then turn up to the 2nd setting and let it knead for 7 more minutes. The dough should pull away from the sides of the bowl and be soft and smooth. If you are hand mixing you can mix to combine in the bowl and then turn your dough out onto a floured surface and hand knead for 7-10 mins.
Transfer your dough to a lightly greased bowl, cover with a damp tea towel or plastic wrap and allow to rise in a warm spot for about 45 minutes to 1 hour. When it is ready it should have doubled in size.
Set your oven to 375F. Lightly flour your work surface and turn out the dough. Use your fingers to gently pat the dough into an 8 x 12 inch rectangle. Starting on the short end, tightly roll the dough into a log, tuck in the sides and shape to create tension over the top of the loaf.
This recipe will make one loaf in a 9x5 (1.5 quart) pan or two loaves in an 8x4 pan. Lightly grease your loaf pan and place the dough into it to rise a second time, around 25-30 minutes while your oven is heating.
Bake for 25-30 mins, your loaf shuold be golden brown on top and sound hollow when tapped. Remove and let cool for 10 mins, then you can remove from the pan and let it finish cooling on a wire rack.
