Freezing and Baking From Frozen
- Freeze: After assembling the meatloaf, wrap the baking dish tightly with plastic wrap and then with aluminum foil. Freeze for up to 6 months.
- Thaw and Bake: Thaw the frozen meatloaf in the refrigerator overnight. Remove the plastic wrap and bake as directed in this recipe, adding an extra 10-15 minutes to the baking time.
- Bake from frozen: Preheat the oven to 350 degrees. Bake for 60-90 mins depending on the size of your loaf.

For The Filling:
- 2 lbs ground beef
- 1 cup breadcrumbs
- 2 egg, beaten
- ⅓ cup milk
- 1 onion, chopped
- 1 tblsp Chopped fresh parsley
- 3 cloves garlic
- 1 tsp garlic powder
- 1tsp onion powder
- 2 tbsp tomato paste
- 1 tblsp plus 1 tsp Worcestershire sauce
- ½ tsp salt
- ½ tsp black pepper
For The Glaze:
- 1 tbslp Brown sugar
- 1 tsp white vinegar
- ½ cup ketchup
Step-by-step Instructions
- Prep the Ingredients: Preheat your oven to 350°F (175°C). In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, tomato paste, Worcestershire sauce, herbs and spices, salt, and pepper. Mix well until thoroughly combined.
- Shape the Loaf: Transfer the mixture to a loaf pan and shape it into a loaf.
- Bake: Place the loaf pan in the preheated oven and bake for 30 mins.
- Glaze: While the meatloaf is baking, prepare a simple glaze by mixing together 1/2 cup ketchup and 1 tablespoon brown sugar or white vinegar. Brush the glaze over the top of the meatloaf and bake for another 30 mins or until a meat thermometer inserted into the center reads 160°F (71°C).
- Serve: Let the meatloaf rest for a few minutes before slicing and serving.
