I make this Roast Beef once a month and it is always a delight. The beef is packed with complex flavors, it is so tender it just falls apart, and the velvety sauce, a perfect complement to creamy mashed potatoes, elevates the dish to new heights. Tips For The Perfect Sunday Roast Beef

Choose the Right Cut: Opt for a cut with good marbling, like rib roast, top sirloin, or chuck roast. These cuts will be tender and flavorful when cooked properly.

Season Generously: Don’t be afraid to season your beef generously with salt, pepper, and your favorite herbs and spices. This will enhance the flavor of the meat.

Make a Delicious Gravy: Use the cooking  liquid to make a rich and flavorful gravy. That is the best part! 

Be sure to sear beforehand: For a richer flavor, sear the roast before adding it to the crock pot. This will give the meat a nice crust and enhance the flavor of the gravy.

What To Serve With Sunday Roast Beef

Roast beef goes perfectly with so many things! A classic option would be creamy mashed potatoes and a veggie like roasted brussel sprouts, roasted root vegetables, or asparagus. You can also turn the leftovers into a beautiful roast beef sandwich! This year I am actually serving this as our Thanksgiving meal and I am serving it with my favorite side of all time, the best Green Bean Casserole.

How to make Sunday Roast Beef

Ingredients

  • 3-4 pound boneless chuck roast
  • 1 large onion, quartered
  • 4 carrots, cut into chunks
  • 4 celery stalks, cut into chunks
  • 2 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Step-by-step Instructions

  1. Prep the Roast: Season the chuck roast with salt and pepper.
  2. Sear the outsides: In a hot pan, sear the outside of your roast to create a crust that will lock in the juices. 
  3. Layer the Ingredients: In the crock pot, layer the onion, carrots, and celery. Place the seasoned roast on top.
  4. Add the Liquid: Pour the beef broth, red wine (if using), Worcestershire sauce, thyme, black pepper, and salt into the pan you used to sear the roast. Cook for around 3 -4 minutes, stirring and scraping up the browned bits off the bottom of the pan. Then pour the liquid over top of the roast in your crock pot.
  5. Cook: Cover and cook on low for 8-10 hours, or on high for 4-6 hours.
  6. Serve: Serve the pot roast with mashed potatoes, roasted vegetables, or your favorite side dish.
